- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 2 cups of sliced zucchini and 2 minced garlic cloves, sautéing for 5–7 minutes until the zucchini is tender and lightly browned.
- In a separate large pot, bring water to a boil and cook 8 ounces of elbow pasta according to the package instructions until al dente, then drain and rinse under cold water.
- Pour 1 cup of half and half into the pot where you cooked the pasta and bring to a gentle boil over medium heat.
- Reduce the heat to low, stir in 1 cup of shredded cheddar cheese and ½ cup of grated Parmesan cheese, stirring for about 2–3 minutes until melted.
- Mix in the cooked elbow pasta and sautéed zucchini, allowing to heat through for another 2 minutes.
- Fold in 4 slices of crumbled cooked bacon, stirring until evenly distributed.
- Spoon the Zucchini Bacon Mac and Cheese into bowls and garnish with reserved crispy bacon. Serve warm.
