For the Chicken
  • 2 pieces boneless, skinless chicken breasts Can substitute with turkey.
For the Tzatziki Sauce
  • 1 cup Greek yogurt Use dairy-free alternative if desired.
  • 1 piece cucumber Diced, peeling optional.
  • 2 tablespoons olive oil Avocado oil can be used as a substitute.
  • 1 tablespoon lemon juice Fresh is best.
  • 1 clove garlic Minced; garlic powder can be used as substitute.
  • 1 teaspoon dried dill Swap for fresh dill if preferred.
  • Salt & Pepper To taste.
For the Salad
  • 1 cup halved cherry tomatoes Can replace with diced regular tomatoes.
  • 1 piece bell pepper Diced, any color works.
  • 1/2 piece red onion Thinly sliced, can substitute with green onion.
  • 1/4 cup fresh parsley For garnish.

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine Greek yogurt, diced cucumber, olive oil, lemon juice, minced garlic, dried dill, and a pinch of salt and pepper. Stir until well blended and creamy, then set aside.
  2. Season the chicken breasts with salt and pepper on both sides. Grill over medium-high heat for approximately 7-10 minutes on each side until they reach an internal temperature of 165°F. Remove from grill and let rest before slicing.
  3. In a large mixing bowl, add the sliced grilled chicken, halved cherry tomatoes, diced bell pepper, and thinly sliced red onion. Toss gently to combine.
  4. Drizzle the tzatziki sauce over the salad ingredients. Toss gently until everything is well-coated with the sauce.
  5. For enhanced flavors, cover and refrigerate the salad for about 10 minutes before serving.
  6. Sprinkle freshly chopped parsley over the top before serving.
