Ingredients
  

For the Roasted Tomatoes
  • 500 g mixed cherry tomatoes very ripe for the best flavor
  • 2 cloves garlic finely sliced
  • 3-4 sprigs thyme or oregano as a substitute
  • 5 Tbsp Babylonstoren Extra Virgin Coratina Olive Oil 3 Tbsp for roasting, 2 Tbsp for blending
  • 1 Tbsp balsamic vinegar optional for sweetness
For the Whipped Feta
  • 200 g crumbly feta goat cheese is a great substitute
  • ¼ cup full fat cream cheese plus 2 Tbsp
  • ½ lemon lemon zest freshly grated
  • small handful fresh basil leaves or parsley as a substitute
  • salt & pepper to taste
For Serving
  • 1 loaf griddle fried ciabatta with olive oil

Method
 

Step‑by‑Step Instructions
  1. Preheat the oven to 180°C (350°F).
  2. In a small baking dish, combine cherry tomatoes, sliced garlic, and thyme. Drizzle with 3 Tbsp of olive oil and balsamic vinegar if desired. Season with salt and pepper, tossing to coat.
  3. Roast the mixture in the oven for about 30 minutes until tomatoes are blistered and garlic is golden.
  4. Remove from oven and let cool for a few minutes.
  5. In a food processor, blend feta, cream cheese, lemon zest, and remaining olive oil for 3-4 minutes until smooth.
  6. Spread the whipped feta on a serving plate, then top with the roasted tomato mixture.
  7. Drizzle with honey and sprinkle with fresh basil before serving with warm ciabatta.
