Ingredients
  

For the Salad
  • 2 pieces Chicken Breast skinless and boneless, roasted
  • 3 stalks Celery fresh
  • 2 pieces Granny Smith Apples chopped
  • 2 cups Seedless Red Grapes halved
  • 1 cup Walnuts freshly shelled
  • 1/4 cup Fresh Mint optional, chopped
For the Dressing
  • 1 tablespoon Dijon Mustard
  • 1/2 cup Mayonnaise light optional
  • 2 tablespoons Lemon Juice freshly squeezed

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C). Season chicken breasts with salt and pepper. Roast for 25-30 minutes until fully cooked. Allow to cool before chopping.
  2. Core and chop Granny Smith apples into cubes. Halve grapes and set aside.
  3. Chop celery and any optional herbs. Combine them in a bowl.
  4. In a large bowl, mix chopped chicken, celery, apples, grapes, and walnuts. Toss gently to combine.
  5. In a separate bowl, whisk together mayonnaise, mustard, and lemon juice. Adjust seasoning with salt and pepper.
  6. Pour dressing over salad and toss gently until coated. Serve immediately or refrigerate for an hour before serving.
