- Preheat your oven to 375°F (190°C). Season chicken breasts with salt and pepper. Roast for 25-30 minutes until fully cooked. Allow to cool before chopping.
- Core and chop Granny Smith apples into cubes. Halve grapes and set aside.
- Chop celery and any optional herbs. Combine them in a bowl.
- In a large bowl, mix chopped chicken, celery, apples, grapes, and walnuts. Toss gently to combine.
- In a separate bowl, whisk together mayonnaise, mustard, and lemon juice. Adjust seasoning with salt and pepper.
