Ingredients

For the Agua Fresca
  • 2 cups Fresh Pineapple chopped, opt for ripe, juicy pineapple for best results.
  • 2 cups Fresh Strawberries hulled and sliced, can be substituted with raspberries or blueberries.
  • 4 cups Cold Water for diluting the fruit mixture.
  • 1/4 cup Granulated Sugar adjust to taste; consider alternatives like honey or agave.
  • 1 Juice of Lime optional for those who prefer a sweeter drink.
  • Ice Cubes used for serving chilled.
  • Fresh Mint Leaves optional for garnish.

Equipment

  • blender
  • fine mesh sieve
  • Large pitcher

Method

Instructions
  1. Blend the Fruits: Start by adding 2 cups of chopped fresh pineapple and 2 cups of hulled and sliced fresh strawberries into a blender. Pour in 2 cups of cold water and blend until smooth, about 1-2 minutes.
  2. Strain the Mixture: Place a fine mesh sieve over a large pitcher. Pour the blended mixture through the sieve, pressing down with a spoon to extract juice, separating the pulp.
  3. Add Remaining Ingredients: Pour in the remaining 2 cups of cold water, 1/4 cup of granulated sugar (or adjust to taste), and the juice of 1 lime. Stir until sugar is dissolved, about 1-2 minutes.
  4. Taste and Adjust Sweetness: Taste the mixture and adjust sweetness by adding more sugar gradually, stirring well after each addition.
  5. Chill the Agua Fresca: Cover the pitcher and chill in the fridge for at least 30 minutes to meld flavors.
  6. Serve Over Ice: Fill glasses with ice cubes and pour the chilled agua fresca over the ice. Garnish with fresh mint leaves if desired.
