Ingredients

  • 1 large Baby Red Onion Or normal red onion; shallots can be used as a substitute.
  • 2 teaspoons Ground Black Lime Can be substituted with sumac.
  • 2 tablespoons Red Wine Vinegar Apple cider vinegar can also be used.
  • 1 teaspoon Salt Kosher or sea salt recommended.
For the Dressing
  • 4 tablespoons Olive Oil Or avocado oil for a lighter touch.
  • 2 tablespoons Pomegranate Molasses Can substitute with honey or agave syrup.
For the Salad
  • 4 cups Tomatoes (mixed sizes and colors) Heirloom tomatoes can be included.
  • 1 cup Basil Leaves Mint or parsley can serve as alternatives.
  • 1 teaspoon Flaked Sea Salt Optional but enhances taste.

Method
 

Preparation Steps
  1. Thinly slice the baby red onions and place them in a medium bowl. Add the ground black lime, red wine vinegar, and salt. Massage the mixture gently for about 2 minutes until the onions soften and become fragrant. Let them sit for 20 minutes to macerate.
  2. In a separate mixing bowl, whisk together the olive oil, pomegranate molasses, additional red wine vinegar, ground black lime, and a pinch of salt until well combined. Set it aside.
  3. Wash and dry your mixed tomatoes thoroughly. Slice larger tomatoes into thick rounds and halve the smaller varieties. Combine halved small tomatoes with torn basil leaves and half of the pomegranate arils in a mixing bowl. Drizzle some of the dressing over this mixture and toss gently to coat.
  4. On a large serving platter, artistically arrange the sliced larger tomatoes around the edges. Spoon the small tomato mixture into the center, and scatter the marinated black lime onions over the top followed by the remaining pomegranate arils and basil leaves.
