Ingredients
  

For the Burger Patties
  • 1 pound ground turkey or substitute with chicken, pork, or shrimp
  • 1 tablespoon grated ginger fresh is best
  • 1 clove grated garlic or use garlic powder
  • 2 tablespoons red curry paste or substitute with green curry paste
  • 2 tablespoons reduced-sodium soy sauce or tamari for gluten-free
  • 1 tablespoon fish sauce omit for vegetarian burgers
  • 1 teaspoon kosher salt sea salt is a good alternative
  • 2 teaspoons tamarind puree optional
  • 1 tablespoon neutral oil such as vegetable or canola for cooking
For the Slaw
  • 2 cups shredded cabbage green or purple
  • 1 cup grated carrot or use coleslaw mix
  • ¼ cup fresh cilantro or substitute with parsley
  • ¼ cup chopped fresh basil Thai basil is perfect if available
  • 2 scallions sliced
  • 1 medium Persian cucumber or any fresh cucumber variety
  • ½ cup fresh lime juice or lemon juice in a pinch
  • teaspoons brown sugar or white sugar
For the Sauce
  • ½ cup mayonnaise or Greek yogurt for a healthier option
  • ¼ cup sweet Thai chili sauce adjust according to preference
  • 1 tablespoon chili crisp omit for a milder sauce
For Serving
  • 4 buns brioche whole wheat or gluten-free buns are also great

Method
 

Prepare the Slaw
  1. In a medium bowl, combine sliced Persian cucumber, diced Fresno chile, ½ cup of fresh lime juice, 2 ½ teaspoons of brown sugar, and a pinch of kosher salt. Mix well and marinate for at least 15 minutes.
Make Cabbage Slaw
  1. In a large bowl, combine 2 cups of shredded cabbage, grated carrot, chopped cilantro, fresh basil, and sliced scallions. Drizzle with 1 tablespoon of lime juice and toss thoroughly.
Mix Burger Patties
  1. In a large mixing bowl, combine 1 pound of ground turkey, grated ginger, minced garlic, red curry paste, reduced-sodium soy sauce, fish sauce, tamarind puree, and a sprinkle of kosher salt. Mix gently, shape into 4 patties.
Cook the Patties
  1. Heat 1 tablespoon of neutral oil in a large skillet. Cook the turkey patties for 6-7 minutes each side until golden brown and cooked through.
Prepare Sweet Chili Mayo
  1. Mix ½ cup of mayonnaise with ¼ cup of sweet Thai chili sauce and chili crisp in a small bowl. Adjust heat to taste.
Assemble the Burgers
  1. Toast the brioche buns, place each turkey patty on the bottom half, top with slaw, and drizzle with sweet chili mayo.
