Prepare the Slaw

Make Cabbage Slaw
- In a large bowl, combine 2 cups of shredded cabbage, grated carrot, chopped cilantro, fresh basil, and sliced scallions. Drizzle with 1 tablespoon of lime juice and toss thoroughly.
Mix Burger Patties
- In a large mixing bowl, combine 1 pound of ground turkey, grated ginger, minced garlic, red curry paste, reduced-sodium soy sauce, fish sauce, tamarind puree, and a sprinkle of kosher salt. Mix gently, shape into 4 patties.
Cook the Patties
- Heat 1 tablespoon of neutral oil in a large skillet. Cook the turkey patties for 6-7 minutes each side until golden brown and cooked through.
Prepare Sweet Chili Mayo
- Mix ½ cup of mayonnaise with ¼ cup of sweet Thai chili sauce and chili crisp in a small bowl. Adjust heat to taste.
Assemble the Burgers
- Toast the brioche buns, place each turkey patty on the bottom half, top with slaw, and drizzle with sweet chili mayo.
