- In a large mixing bowl, combine ground turkey, breadcrumbs, chopped green onions, cilantro, minced garlic, grated ginger, soy sauce, lime juice, sesame oil, salt, and pepper. Mix gently until just combined.
- Divide the mixture into four equal portions and shape into patties about ¾ inch thick. Cover and refrigerate for about 10 minutes.
- Preheat your grill or skillet over medium-high heat for about 5 minutes. If using a skillet, add a drizzle of oil.
- Carefully place the chilled patties onto the hot grill or skillet. Cook for 5-6 minutes on each side until golden brown and an internal temperature of 165°F (74°C) is reached.
- In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey, and sriracha until smooth. Adjust thickness with warm water if needed.
- Assemble burgers by spreading peanut sauce on the bottom half of the bun, placing a patty on top, adding more sauce, and finishing with shredded carrot, cucumber, cilantro, and red onion. Top with the other half of the bun.
- Serve immediately while hot and juicy, potentially with extra peanut sauce on the side.
