Step-by-Step Instructions
  1. Rinse the cleaned octopus under cold running water to remove any residual salt or impurities. Pat it dry and set aside.
  2. In a large stockpot, combine enough water to submerge the octopus, the halved onion, smashed garlic, bay leaves, whole peppercorns, vinegar, and salt. Stir well to dissolve the salt.
  3. Bring the pot to a gentle boil over medium heat, then reduce to low simmer. Allow the flavors to meld for about 10 minutes.
  4. Carefully lower the octopus into the simmering broth and let it simmer for 45-60 minutes, until tender.
  5. Turn off the heat and let the octopus rest in the cooking liquid for an additional 10 minutes before slicing.
