- Preheat your air fryer to 400°F for about 5 minutes.
- Wash and slice the eggplant into 2-inch pieces, approximately 1/2 inch thick. Sprinkle with kosher salt and let sit.
- Drizzle agave nectar and sesame oil over the eggplant and toss until evenly coated.
- Place the eggplant in a single layer in the air fryer basket.
- Cook for 8 minutes and check halfway through.
- While the eggplant cooks, whisk together the remaining agave nectar, sesame oil, soy sauce, and hot sauce in a small bowl.
- Flip the eggplant and brush half of the sauce over them.
- Return to air fryer and cook for another 5 minutes, then flip and apply remaining sauce. Cook for an additional 3-5 minutes until golden-brown.
- Transfer to a serving dish and garnish with scallions and sesame seeds before serving warm.
