  • 1 teaspoon Hot Sauce Adjust or omit to taste
For Garnishing
  • 2 tablespoons Scallion Chopped, optional but recommended
  • 1 tablespoon White Sesame Seeds Optional for garnish

Method
 

Step‑by‑Step Instructions
  1. Preheat your air fryer to 400°F for about 5 minutes.
  2. Wash and slice the eggplant into 2-inch pieces, approximately 1/2 inch thick. Sprinkle with kosher salt and let sit.
  3. Drizzle agave nectar and sesame oil over the eggplant and toss until evenly coated.
  4. Place the eggplant in a single layer in the air fryer basket.
  5. Cook for 8 minutes and check halfway through.
  6. While the eggplant cooks, whisk together the remaining agave nectar, sesame oil, soy sauce, and hot sauce in a small bowl.
  7. Flip the eggplant and brush half of the sauce over them.
  8. Return to air fryer and cook for another 5 minutes, then flip and apply remaining sauce. Cook for an additional 3-5 minutes until golden-brown.
  9. Transfer to a serving dish and garnish with scallions and sesame seeds before serving warm.
