  • 3 small Shallots Substitute with yellow onions if needed.
  • 1 tablespoon Chinese Cooking Wine Sherry or dry white wine are good substitutes.
  • 0.5 teaspoon Fish Sauce Soy sauce works if you prefer to avoid fish sauce.
  • 2 tablespoons Ketchup Essential for balancing sweetness and acidity.
  • 1 tablespoon Mustard Dijon or yellow mustard can be used interchangeably.
  • 2 tablespoons Sambal Oelek Feel free to replace with your go-to hot sauce.

Method
 

Step-by-Step Instructions
  1. Prepare Ribs: Remove the silver skin membrane from the back of the ribs, rinse under cold water, and pat dry.
  2. Coat with Oil: Lightly coat the ribs with oil on both sides and place on a board.
  3. Apply Dry Rub: Generously sprinkle the Coffee Dry Rub over both sides of the ribs.
  4. Wrap and Bake: Wrap the ribs tightly in aluminum foil and bake in a preheated oven at 250°F for 2 hours and 45 minutes to 3 hours.
  5. Make Sauce: Blend garlic, ginger, and shallots; sauté with oil, then add Coca-Cola and simmer until thickened.
  6. Combine and Glaze: Mix juices from the ribs with the sauce, brush onto the ribs.
  7. Broil: Broil the ribs on each side for 5 minutes, ensuring they caramelize.
  8. Serve: Allow to rest a few minutes, slice, and serve with sides.
