- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Cut the fresh cauliflower head into bite-sized florets and pat them dry with a paper towel.
- Toss the cauliflower florets with olive oil, salt, black pepper, and garlic powder until well-coated.
- Spread the florets in a single layer on the prepared baking sheet.
- Roast the cauliflower for 25-30 minutes, flipping halfway through until golden brown and crispy.
- While roasting, combine chili sauce, honey, soy sauce, and apple cider vinegar in a small saucepan over medium heat.
- Once the cauliflower is done, toss it in the thickened glaze until well-coated.
- Spread the glazed cauliflower back on the baking sheet and return to the oven for another 5-7 minutes.
- Sprinkle with chopped chives or green onions before serving.
