  • 8 oz Bow Tie Pasta or swap for rotini or penne
For the Salad
  • 1 cup Strawberries ripe and seasonal
  • 4 cups Baby Spinach
  • 1 cup Red Grapes halved
  • 1/2 cup Red Onion thinly sliced
  • 1 can Mandarin Oranges drained
  • 1 cup Feta Cheese
  • 1/2 cup Pecans chopped
For the Dressing
  • 1/2 cup Poppy Seed Dressing or your favorite vinaigrette
For Seasoning
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package directions, about 8-10 minutes, until al dente. Drain and rinse under cold water.
  2. Wash and slice fresh strawberries and halved grapes. Thinly slice the red onion. In a large bowl, combine strawberries, spinach, grapes, onion, and mandarin oranges.
  3. Add the cooled pasta to the bowl and mix gently until well combined.
  4. Drizzle the poppy seed dressing over the salad and add salt and pepper to taste. Toss everything together until well coated.
  5. Cover the bowl and refrigerate for at least 30 minutes to enhance the flavors.
  6. Serve chilled, garnishing with extra pecans or feta if desired.
