Preparation
- In a small bowl, combine mayonnaise or Greek yogurt, minced chipotle in adobo, lime juice, and a pinch of salt. Mix until smooth and refrigerate.
- In a large mixing bowl, combine ground turkey, tortilla chips, diced green chiles, red onion, mayonnaise or Greek yogurt, lime juice, and spices. Mix thoroughly.
- Shape mixture into four patties, about 1/2 to 3/4 inch thick, with a small thumbprint in the center.
- Preheat a skillet over medium heat for about 2 minutes, adding oil to prevent sticking.
- Sear the patties for 5-6 minutes on one side, then flip and cook another 4-6 minutes until internal temperature reaches 165°F.
- Place a slice of cheese on each patty during the last minute of cooking and cover to melt.
- Transfer cooked patties to a plate and let rest for 3-5 minutes.
- Toast buns until golden brown, spread southwest sauce on bottom bun, place turkey patty, add toppings, and cover with top bun.
