- Slice the boneless skinless chicken breasts into thin strips. In a bowl, combine chicken, soy sauce, and cold water. Marinate for 10 minutes. Add cornstarch and vegetable oil, mixing well and set aside for 20 minutes.
- Whisk together the sauce ingredients in a medium bowl. Combine soy sauce, oyster sauce, rice vinegar, Shaoxing wine, honey, ginger, garlic, and chili paste. Set aside.
- Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Stir-fry marinated chicken for 5-7 minutes until browned and cooked through. Remove and keep warm.
- In the same skillet, add another tablespoon of oil and toss in broccoli florets. Stir-fry for 1-2 minutes, then add onion, celery, bell pepper, and carrot. Stir-fry for an additional 2-3 minutes until vibrant and crisp-tender.
