Step-by-Step Instructions
  1. Begin by heating 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add in 1 pound of lean ground beef along with 1 diced onion. Stir frequently for about 5-7 minutes until browned.
  3. Once the beef is nearly cooked through, stir in 2 cloves of grated garlic, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and season with salt and pepper.
  4. Remove the beef mixture from the skillet and set it aside on a plate. Wipe the skillet clean.
  5. In the same skillet, add 2 cups of diced sweet potatoes, 1 can of fire-roasted diced tomatoes, 1 can of diced green chiles, and ½ cup of water. Cover and simmer for about 20 minutes.
  6. Return the beef mixture back into the skillet and stir thoroughly. Spread 1 cup of shredded cheddar cheese on top and cover until melted.
  7. Once the cheese is melted, remove from heat and garnish with chopped cilantro if desired.
