Step-by-Step Instructions
- Begin by heating 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add in 1 pound of lean ground beef along with 1 diced onion. Stir frequently for about 5-7 minutes until browned.
- Once the beef is nearly cooked through, stir in 2 cloves of grated garlic, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and season with salt and pepper.
- Remove the beef mixture from the skillet and set it aside on a plate. Wipe the skillet clean.
- In the same skillet, add 2 cups of diced sweet potatoes, 1 can of fire-roasted diced tomatoes, 1 can of diced green chiles, and ½ cup of water. Cover and simmer for about 20 minutes.
- Return the beef mixture back into the skillet and stir thoroughly. Spread 1 cup of shredded cheddar cheese on top and cover until melted.
- Once the cheese is melted, remove from heat and garnish with chopped cilantro if desired.

Notes
Ensure sweet potatoes are diced evenly for consistent cooking. This dish stores well and can be meal prepped in advance.
