Method
 

Step-by-Step Instructions
  1. Preheat your sous vide machine to 132°F (56°C) for medium-rare steak.
  2. Season filet mignon with kosher salt and black pepper. Let it rest for 30 minutes if desired.
  3. Place the steak in a ziplock bag using the water displacement method or vacuum seal it.
  4. Immerse the sealed steak in the preheated water bath for 1 hour (up to 4 hours if desired).
  5. Remove steak, pat it dry with paper towels.
  6. Heat a skillet over high heat. Add olive oil and butter, and sear the steak for 1 minute on each side.
  7. Let the steak rest for a few minutes before slicing and serving.
