- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Crush the Cadbury Mini Eggs in a Ziploc bag using a rolling pin, leaving larger pieces for texture.
- In a medium bowl, whisk together the all-purpose flour, salt, and baking soda until well-combined.
- In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy, then add eggs and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix on low speed until a cohesive dough forms. Fold in chocolate chips and most of the crushed Cadbury Mini Eggs.
- Using a cookie scoop, drop spoonfuls of cookie dough onto the prepared baking sheet.
- Bake for 10 minutes, the edges should look set while the centers may be slightly underbaked.
- Press the reserved crushed Cadbury Mini Eggs and chocolate chips into the tops of each cookie after removing from the oven. Let cool briefly on the baking sheet.
