Ingredients
  

For the Ribs
  • 2 pounds Country-style pork ribs Bone-in for extra flavor or boneless for ease of slicing.
  • 1/2 cup Yellow mustard Acts as a binder for the seasoning.
For the Spice Rub
  • 1/4 cup BBQ pork rub Store-bought or homemade, ensure it's well-balanced.
For Braising
  • 1 cup Barbecue sauce Try Lillie's Q Smoky BBQ Sauce or your own recipe.
  • 1/2 cup Butter Cut into pats for even melting.
  • 1/4 cup Honey Can substitute with brown sugar if out of honey.
For Spritzing (Optional)
  • 1/4 cup Apple cider vinegar Mix with water to keep ribs moist.

Method
 

Prep the Ribs
  1. Coat the country-style pork ribs with yellow mustard, ensuring even coverage on both sides. Sprinkle BBQ pork rub over the ribs, pressing it in gently, and let sit at room temperature for about 30 minutes.
Preheat the Smoker
  1. Preheat your smoker to 250°F. Once at temperature, place the ribs directly on the grates, allowing for airflow, and smoke for 1.5 to 2 hours until internal temp reaches 165°F.
Braise the Ribs
  1. Transfer the ribs to an aluminum pan, top with butter, drizzle honey, and pour BBQ sauce over them. Cover tightly with foil and return to smoker at 250°F for another 1.5 to 2 hours until tender.
Glaze the Ribs
  1. Remove the pan from the smoker and place the ribs back on the grates. Increase temperature to 300°F, brush with braising liquid and smoke for 10 to 15 minutes until caramelized.
Rest and Serve
  1. Allow the ribs to rest on a cutting board for about 10 minutes before slicing and serving with additional BBQ sauce.
