  • 2 cups Water
  • 1/4 cup Soy Sauce Gluten-free option available
  • 2 tablespoons Sesame Oil
  • 2 tablespoons Brown Sugar Adjust to taste
For the Aromatics
  • 4 cloves Garlic Use fresh
  • 1 medium Onion Sliced
  • 1 tablespoon Ginger Fresh grated
For the Noodles and Veggies
  • 8 ounces Fresh Ramen Noodles Can also use egg noodles
  • 2 cups Baby Spinach Substitute with bok choy if desired
For Serving
  • 1/4 cup Green Onions Sliced
  • 4 each Soft-boiled Eggs Optional
  • to taste Sriracha/Chili Oil Optional

Method
 

Step-by-Step Instructions
  1. Season the beef chuck roast with salt and pepper and place it in the slow cooker.
  2. Layer sliced onions, minced garlic, and grated ginger on top of the beef.
  3. Pour in beef broth, water, soy sauce, sesame oil, and brown sugar. Stir gently to combine.
  4. Cover and set the slow cooker on low for 8 hours or high for 4 hours.
  5. Prepare the fresh ramen noodles according to package instructions about 10 minutes before serving.
  6. Stir in baby spinach into the slow cooker during the last few moments of cooking.
  7. Ladle the beef and broth over cooked ramen noodles in bowls.
  8. Garnish with sliced green onions, soft-boiled eggs, and Sriracha or chili oil.
