  1. Wash the mushrooms thoroughly and slice them evenly. Rinse the spinach and pat dry. Mince the garlic and juice the lemon, setting aside.
  2. In a large skillet, heat olive oil over medium heat until shimmering.
  3. Add sliced mushrooms to the skillet in a single layer and cook undisturbed for 3-4 minutes.
  4. Stir the mushrooms occasionally for another 5-7 minutes until soft and browned.
  5. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  6. Gradually add spinach in batches, allowing it to wilt, about 2-3 minutes.
  7. Season with salt and pepper to taste and drizzle with lemon juice. Toss to combine.
