- Start by filling a large pot with water and adding a generous amount of salt. Place on high heat to boil.
- Once boiling, add 8 ounces of pasta and cook for 8-10 minutes until al dente, reserving 1 cup of the pasta water before draining.
- Season 1 pound of salmon fillet with salt, pepper, and 2 tablespoons of lemon juice. Heat 2 tablespoons of olive oil in a skillet and cook salmon for 4-5 minutes on each side.
- Remove salmon, flake into bite-sized pieces, and set aside.
- In the same skillet, add 2 cloves of minced garlic and sauté for 30 seconds until fragrant.
- Stir in 4 cups of chopped spinach until wilted (2-3 minutes), then add 1 cup of heavy cream and mix.
- Mix in 1/2 cup of grated Parmesan cheese, 1 teaspoon of lemon zest, and 2 tablespoons of lemon juice, simmer for 2-3 minutes until thickened.
- Combine the drained pasta with the salmon, tossing gently to coat in the sauce, adding reserved pasta water if needed.
- Serve garnished with fresh parsley.
