  • 2 tablespoons Lemon Juice Can replace with vinegar if necessary.
  • 1/4 teaspoon Red Pepper Flakes Optional for added heat.

For the Main Ingredients
  • 1 pound Salmon Fillet Loaded with omega-3 fatty acids; shrimp or chicken can be substitutes.
  • 4 cups Fresh Spinach Chopped; kale or swiss chard can be used instead.
  • Fresh Parsley For garnish.

Method
 

  1. Start by filling a large pot with water and adding a generous amount of salt. Place on high heat to boil.
  2. Once boiling, add 8 ounces of pasta and cook for 8-10 minutes until al dente, reserving 1 cup of the pasta water before draining.
  3. Season 1 pound of salmon fillet with salt, pepper, and 2 tablespoons of lemon juice. Heat 2 tablespoons of olive oil in a skillet and cook salmon for 4-5 minutes on each side.
  4. Remove salmon, flake into bite-sized pieces, and set aside.
  5. In the same skillet, add 2 cloves of minced garlic and sauté for 30 seconds until fragrant.
  6. Stir in 4 cups of chopped spinach until wilted (2-3 minutes), then add 1 cup of heavy cream and mix.
  7. Mix in 1/2 cup of grated Parmesan cheese, 1 teaspoon of lemon zest, and 2 tablespoons of lemon juice, simmer for 2-3 minutes until thickened.
  8. Combine the drained pasta with the salmon, tossing gently to coat in the sauce, adding reserved pasta water if needed.
  9. Serve garnished with fresh parsley.
