  1. Preheat a large skillet or grill pan over medium heat for about 3–5 minutes until hot.
  2. Toss together zucchini, red bell pepper, red onion, olive oil, salt, pepper, and dried oregano. Sauté for 3–4 minutes until softened.
  3. On one tortilla, sprinkle half of the shredded cheese, layer with sautéed vegetables, sun-dried tomatoes, olives, feta, and remaining cheese.
  4. Place the assembled quesadilla in the skillet and cook for 2–3 minutes on each side until golden-brown and cheese is melted.
