Cooking Instructions
- In a medium saucepan, combine 1 cup of creamy peanut butter, 1/2 cup of honey (or maple syrup), and 1/3 cup of unsweetened cocoa powder over medium heat. Stir the ingredients consistently for about 3-5 minutes until the mixture melts and becomes smooth.
- Remove the saucepan from heat and immediately stir in 3 cups of rolled oats and 1 teaspoon of vanilla extract. Mix well for another 2-3 minutes.
- Using a tablespoon or cookie scoop, drop spoonfuls of the cookie mixture onto a sheet of parchment paper.
- Place the tray in the refrigerator and let the cookie mixture chill for at least 30 minutes.
- Once the cookies have set, remove them from the fridge and enjoy immediately!
