Meatball Preparation
- In a large mixing bowl, combine ground chicken, egg, breadcrumbs, crumbled feta, chopped parsley, dried oregano, minced garlic, lemon zest, salt, and pepper. Mix gently and chill.
- Once chilled, preheat a skillet over medium heat and add olive oil. Form meatballs and cook until browned.
- Cook meatballs for 4-5 minutes on each side until golden brown and fully cooked. Keep warm.
Lemon Orzo Preparation
- In a saucepan, bring chicken broth to a boil, add orzo, and cook per package instructions. Drain excess liquid.
- Mix in butter, lemon juice, lemon zest, and minced garlic until combined.
Serving
- Serve lemon orzo topped with meatballs, garnished with parsley, dill, feta, and lemon wedges.
