Ingredients
  

For the Meatballs
  • 1 pound Ground Chicken or ground turkey
  • 1 large Egg binds ingredients
  • 1 cup Breadcrumbs plain or panko
  • 2 tablespoons Olive Oil for cooking
  • 4 ounces Feta Cheese crumbled
  • 1/4 cup Fresh Parsley chopped
  • 1 teaspoon Dried Oregano
  • 2 cloves Garlic minced
  • 1 tablespoon Lemon Zest fresh preferred
  • 1 tablespoon Lemon Juice fresh preferred
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Lemon Orzo
  • 1 cup Orzo Pasta or substitute with rice, quinoa, or gluten-free pasta
  • 2 cups Chicken Broth for cooking orzo
  • 2 tablespoons Butter or olive oil
For Garnish
  • 1 sprig Fresh Dill optional
  • 1 whole Lemon Wedges for serving

Method
 

Meatball Preparation
  1. In a large mixing bowl, combine ground chicken, egg, breadcrumbs, crumbled feta, chopped parsley, dried oregano, minced garlic, lemon zest, salt, and pepper. Mix gently and chill.
  2. Once chilled, preheat a skillet over medium heat and add olive oil. Form meatballs and cook until browned.
  3. Cook meatballs for 4-5 minutes on each side until golden brown and fully cooked. Keep warm.
Lemon Orzo Preparation
  1. In a saucepan, bring chicken broth to a boil, add orzo, and cook per package instructions. Drain excess liquid.
  2. Mix in butter, lemon juice, lemon zest, and minced garlic until combined.
Serving
  1. Serve lemon orzo topped with meatballs, garnished with parsley, dill, feta, and lemon wedges.
