Step‑by‑Step Instructions
  1. Melt 2 tablespoons of butter in a skillet over medium heat. Add 6 minced garlic cloves and sauté until fragrant, about 1-2 minutes. Stir in panko breadcrumbs, thyme, sage, and parsley, along with red pepper flakes. Season with salt and pepper and meld flavors for an additional 2-3 minutes before removing from heat.
  2. Lay out turkey breasts on a cutting board. Season both sides with kosher salt and black pepper. Use a meat mallet to pound turkey to an even thickness, roughly ½ inch.
  3. Spread the prepared filling over the turkey breasts, leaving an inch around edges. Roll the turkey tightly into a log shape and secure with kitchen twine.
  4. Heat vegetable oil in a skillet over medium-high heat. Add the turkey roulade, browning on all sides for about 6-8 minutes. Transfer to a preheated oven at 375°F. Roast for about 60 minutes or until internal temperature reaches 165°F.
  5. Remove from oven and let rest for at least 10 minutes before slicing into thick rounds.
