Step-by-Step Instructions for 5-1-0 BBQ Ribs
- Preheat your smoker to 250°F. Remove the membrane from the ribs and pat them dry with paper towels.
- Generously season the ribs with your dry rub and let them rest for 30 minutes.
- Place the seasoned ribs in the smoker, bone side down, and smoke for the first 2 hours.
- After two hours, apply the mop sauce every 30 minutes and flip the ribs at the three-hour mark, meat side down.
- After an hour, flip the ribs back to meat side up. They should show a reddish-brown color.
- At the five-hour mark, remove the ribs from the smoker and wrap them in foil with mop sauce.
- Return the wrapped ribs to the smoker for an additional hour.
- Unwrap the ribs and let them rest for 15 minutes before serving.
