Step-by-Step Instructions for 5-1-0 BBQ Ribs
  1. Preheat your smoker to 250°F. Remove the membrane from the ribs and pat them dry with paper towels.
  2. Generously season the ribs with your dry rub and let them rest for 30 minutes.
  3. Place the seasoned ribs in the smoker, bone side down, and smoke for the first 2 hours.
  4. After two hours, apply the mop sauce every 30 minutes and flip the ribs at the three-hour mark, meat side down.
  5. After an hour, flip the ribs back to meat side up. They should show a reddish-brown color.
  6. At the five-hour mark, remove the ribs from the smoker and wrap them in foil with mop sauce.
  7. Return the wrapped ribs to the smoker for an additional hour.
  8. Unwrap the ribs and let them rest for 15 minutes before serving.
