Ingredients
  

For the Batter
  • 1 cup Almond Milk For homemade buttermilk.
  • 1 tablespoon Apple Cider Vinegar For buttermilk.
  • 1 cup All-Purpose Flour Can substitute with gluten-free flour.
  • ¼ cup Cornstarch Optional for gluten-free.
  • 1 tablespoon Sweet Paprika Can use smoked paprika.
  • 1 teaspoon Garlic Powder Can use fresh garlic.
  • 1 teaspoon Onion Powder Optional.
  • ½ teaspoon Turmeric Optional.
  • 1 teaspoon Kosher Salt Adjust if using table salt.
  • to taste Black Pepper Freshly ground for best flavor.
  • 8 ounces Oyster Mushrooms Choose large, firm bunches.
For Frying and Gravy
  • ½ cup Vegetable Oil Can use canola oil.
  • to taste Flaky Sea Salt Optional.
  • 2 tablespoons Vegan Butter Regular butter can be used if not vegan.
  • 1 cup Cremini Mushrooms Chopped.
  • 2 cloves Garlic Minced.
  • to taste Chives For garnish.

Method
 

Preparation
  1. In a mixing bowl, combine almond milk and apple cider vinegar. Let it sit for 5-10 minutes.
  2. In another bowl, whisk together all-purpose flour, cornstarch, sweet paprika, garlic powder, onion powder, turmeric, kosher salt, and black pepper.
  3. Heat oil in a large skillet over medium-high heat until it reaches around 350°F.
  4. Dip each oyster mushroom into the buttermilk, then dredge them in the seasoned flour mixture.
  5. Fry the coated mushrooms in the hot oil in batches for about 4-5 minutes per side.
  6. In the same skillet, add vegan butter, cremini mushrooms, and minced garlic. Sauté for 5 minutes.
  7. Sprinkle flour over the mixture, stir, then gradually add almond milk while stirring until thickened.
  8. Plate the fried mushrooms and drizzle the gravy over top, garnishing with chopped chives.
