Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and coat a 13x9 baking dish with nonstick spray.
  2. In a large skillet, heat the ground beef over medium heat until browned, about 5-7 minutes. Add chopped onions and sauté until softened, about 3-4 minutes.
  3. Stir in taco seasoning and water, bring to a gentle boil. Reduce heat to low and mix in black beans and diced tomatoes. Let simmer for 8-10 minutes.
  4. Spread a layer of Fritos in the bottom of the prepared baking dish. Top with 1 cup of shredded cheese, the beef mixture, and remaining cheese.
  5. Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for an additional 5 minutes until cheese is bubbly and golden.
  6. Allow casserole to cool for a few moments before serving with additional Fritos and customizable toppings.
