- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and peel the sweet potatoes, then slice them into uniform ½-inch rounds.
- Toss the sweet potato rounds in a mixing bowl with olive oil, salt, black pepper, and smoked paprika.
- Spread the seasoned sweet potato rounds on the prepared baking sheet and roast for 25-30 minutes, turning halfway.
- Once golden brown, remove from the oven and let cool for about 5 minutes.
- Transfer to a serving platter, crumble feta cheese on top, drizzle with honey, and garnish with parsley.
- Serve warm or at room temperature.
