  4. Spread the seasoned sweet potato rounds on the prepared baking sheet and roast for 25-30 minutes, turning halfway.
  5. Once golden brown, remove from the oven and let cool for about 5 minutes.
  6. Transfer to a serving platter, crumble feta cheese on top, drizzle with honey, and garnish with parsley.
  7. Serve warm or at room temperature.
