Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Gather your baking sheet.
  2. In a medium bowl, combine halved strawberries, honey, balsamic vinegar, and salt. Toss to coat and spread on a baking sheet. Roast for 15-20 minutes until caramelized.
  3. In a mixing bowl, add ricotta cheese and olive oil. Beat with a mixer until smooth and fluffy, about 3-4 minutes.
  4. Slice the crusty bread and brush both sides lightly with olive oil. Toast in the oven for 3-5 minutes until golden brown.
  5. Spread whipped ricotta on toasted bread, top with roasted strawberries and syrup, and garnish with thyme. Drizzle more honey if desired.
