  • 2 heads Garlic Skins on
  • 3 tbsp Olive Oil Or avocado oil as substitute
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Ground Cumin
  • 1/4 tsp Turmeric Optional
For the Creamy Chickpea Hummus
  • 400 g Chickpeas Drained and rinsed
  • 4 tbsp Tahini
  • 1 unit Lemon Juice Juice from 1 lemon
  • 1/4 cup Fresh Parsley Chopped for garnish
  • 1 tbsp Chili Oil For drizzling

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Slice cauliflower into 1-inch thick 'steaks'. Arrange on a parchment-lined baking sheet. In a bowl, whisk olive oil, salt, pepper, smoked paprika, garlic powder, cumin, and turmeric, and drizzle over the cauliflower. Toss garlic heads onto the baking sheet.
  2. Roast for 25-30 minutes until golden brown and fork-tender. Check garlic for softness.
  3. Squeeze softened garlic cloves into a blender with chickpeas, tahini, lemon juice, salt, and pepper. Blend until smooth, adding water as needed for desired consistency.
  4. Spread hummus on a serving plate, top with roasted cauliflower steaks, sprinkle parsley, and drizzle chili oil.
  5. Serve immediately and enjoy the flavors!
