  • 1 package Ramen Noodles Any flavor packet can be used.
  • 4 cups Cabbage Shredded, green or purple.
  • 1 cup Carrots Shredded.
  • 1 cup Bell Pepper Diced, any color.
For the Dressing
  • 1 ⁄4 cup Soy Sauce Low-sodium recommended.
  • 2 tablespoons Rice Vinegar Can substitute with apple cider vinegar.
  • 2 tablespoons Sesame Oil A little goes a long way.
  • 1 tablespoon Sugar Can substitute with honey.

Method
 

Steps
  1. Boil water in a pot and cook ramen noodles for 3-4 minutes until tender. Drain and rinse with cold water.
  2. Chop the cabbage into thin strips, shred the carrots, and dice the bell pepper.
  3. In a mixing bowl, combine the cooled noodles, cabbage, carrots, and bell pepper, and toss gently.
  4. Whisk together soy sauce, rice vinegar, sesame oil, and sugar in a small bowl until dissolved.
  5. Drizzle dressing over the salad and toss until well coated.
  6. Cover and chill in the refrigerator for at least 15-30 minutes.
  7. Serve chilled, garnished with sesame seeds or green onions if desired.
