Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Roll out puff pastry and cut into four squares. Place on a parchment-lined baking sheet.
  3. Poke holes in each pastry square with a fork and brush edges with egg wash. Sprinkle with kosher salt.
  4. Layer ham slices over each square and sprinkle with gruyère cheese, leaving space for the eggs.
  5. Bake for 10-15 minutes until edges are golden brown.
  6. Create a divot in the center of each pastry for the egg, seasoning with salt and pepper.
  7. Crack an egg into each divot and bake for an additional 10-15 minutes until egg whites are set.
  8. Garnish with chopped chives before serving warm.
