Method
 

Step-by-Step Instructions
  1. Pulse the rolled oats in a food processor until they reach a coarse flour consistency.
  2. Add the soft Medjool dates, shelled pistachios, almond butter, honey or maple syrup, vanilla extract, chia seeds, and salt to the food processor. Blend until sticky and well combined.
  3. Add the dried cranberries and pulse a few times to mix them in without breaking them apart.
  4. Line an 8x8-inch pan with parchment paper, transfer the mixture, and firmly press it down into an even layer.
  5. Refrigerate the pressed mixture for 1 to 2 hours until firm.
  6. Once firm, lift the mixture out of the pan and slice into bars or squares.
  7. Store sliced bars in an airtight container in the refrigerator for up to 10 days or freeze for up to 3 months.
