  1. Pulse 1 cup of rolled oats in a food processor until they reach a coarse flour consistency, about 30 seconds.
  2. Add 1 cup of pitted Medjool dates, ½ cup of shelled pistachios, ½ cup of almond butter, ⅓ cup of honey or maple syrup, 1 teaspoon of vanilla extract, 2 tablespoons of chia seeds, and a pinch of salt to the processed oats. Blend until the mixture is sticky and cohesive, about 1-2 minutes.
  3. Incorporate ½ cup of dried cranberries by pulsing briefly, about 10-15 seconds.
  4. Line an 8x8-inch baking pan with parchment paper. Transfer the mixture into the pan and press down firmly to create an even layer.
  5. Refrigerate for 1 to 2 hours to firm up the mixture.
  6. Lift the mixture from the pan using the parchment overhang. Slice into bars or squares.
