- In a medium saucepan, combine fresh blueberries and sugar, stirring to coat the berries. Cook over medium heat for 10 to 15 minutes.
- Once the blueberry mixture has thickened, remove it from heat and transfer it to a bowl. Allow it to cool to room temperature.
- In a large mixing bowl, add the cooled blueberry mixture along with cubed butter, freshly squeezed lemon juice, and vanilla extract.
- Using an electric mixer set to medium speed, beat the mixture for about 3 to 5 minutes until light and fluffy.
- Transfer the fluffy blueberry butter into an airtight container and place it in the refrigerator. Let it chill for about an hour.
- Once the butter has set, it’s ready to serve either cold or at room temperature.
