For the Ribs
  • 6 lb Pork Baby Back Ribs Approximately 2 racks
  • 1 Tbsp Kosher Salt Enhances flavor
For the Marinade
  • 1 cup Brown Sugar Adds sweetness
  • 4 cloves Garlic (finely minced) Or garlic powder
  • 1/4 cup Olive Oil Or avocado oil
  • 1/4 cup Cider Vinegar Or white vinegar
  • 1/4 cup Cilantro Optional
  • 1 Tbsp Chili Pepper (finely minced) Or any hot pepper
For the Glaze
  • 1 cup Pineapple Juice No substitute recommended
  • 1 tsp Red Pepper Flakes Omit for milder flavor
  • 1/2 cup Mirin Or a mix of water and sugar
  • 1/4 cup Rice Vinegar Or apple cider vinegar

Method
 

Step-by-Step Instructions
  1. Combine the marinade ingredients and rub over the ribs. Refrigerate overnight for at least 8 hours.
  2. Cook the glaze ingredients over medium heat for about 45 minutes to 1 hour until thickened.
  3. Preheat the oven to 350°F (180°C) and line a baking sheet. Place ribs on the sheet, bone side down.
  4. Roast ribs for about 2 hours, basting with glaze every 30 minutes.
  5. Brush remaining glaze over ribs and broil for 3-5 minutes to caramelize.
