Method
 

Preparation
  1. Peel the fresh pineapple and cut it into bite-sized chunks.
  2. Thinly slice the cucumbers into rounds.
  3. Peel and thinly slice the red onion.
Mixing
  1. In a large mixing bowl, combine the pineapple chunks, cucumber slices, and sliced red onion. Gently toss to mix.
Dressing
  1. In a small bowl, whisk together lime juice, olive oil, salt, and pepper until emulsified.
Combine
  1. Drizzle the dressing over the salad and gently toss until coated.
Final Touch
  1. Sprinkle chopped cilantro over the salad and stir gently.
