  • 2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon or swap with nutmeg
  • 1/2 teaspoon Salt
For the Mixture
  • 2 cups Almond Milk any milk works
  • 1/2 cup Maple Syrup or agave syrup
  • 1 tablespoon Chia Egg 1 tbsp chia seeds mixed with 3 tbsp water
  • 1/4 cup Vegan Butter or coconut oil
  • 1 teaspoon Vanilla Extract pure vanilla preferred
For the Topping
  • 1 cup Pecans adjust based on preference

Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish with vegan butter.
  2. In a large bowl, combine rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together almond milk, maple syrup, chia egg, melted vegan butter, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and fold gently until combined.
  5. Melt vegan butter and maple syrup in a saucepan, then add pecans and stir to coat.
  6. Spread the oat mixture in the greased baking dish, smoothing the top.
  7. Evenly distribute the pecan topping over the oat mixture.
  8. Bake for 35 to 40 minutes until golden brown, then cool for 5 minutes before serving.
