Chimichurri Sauce
  • 1 cup Fresh parsley vibrant green leaves for the best taste
  • 3 cloves Garlic fresh garlic recommended for intensity
  • 1 each Fresno pepper substitute with jalapeño for milder kick
  • 1 teaspoon Dried oregano or fresh if preferred
  • 1/2 cup Extra virgin olive oil high-quality for superior flavor
  • 1/4 cup Red wine vinegar substitute with white wine vinegar for lighter taste
  • to taste Salt & fresh ground pepper adjust to taste
Shrimp
  • 1 pound Jumbo shrimp peeled and deveined
  • 2 tablespoons Olive oil for marinating
  • 1 tablespoon Honey or omit for less sweetness
  • 1 teaspoon Smoked paprika substitute with sweet paprika for milder flavor
  • to taste Salt & fresh ground pepper adjust according to preference

Method
 

Preparation Steps
  1. Finely chop fresh parsley, garlic, and Fresno pepper. In a medium bowl, combine chopped ingredients with dried oregano, salt, and pepper. Drizzle in olive oil and red wine vinegar, stirring well. Let sit for at least 1 hour.
  2. Peel and devein the jumbo shrimp. In a large bowl, toss the shrimp with olive oil, minced garlic, honey, smoked paprika, salt, and pepper. Cover and refrigerate for 20 minutes.
  3. Heat a large skillet over high heat until sizzling hot. Ensure proper heat for searing.
  4. Place marinated shrimp in a single layer. Cook for 2-3 minutes on one side until pink and opaque, then flip and cook for 2-3 more minutes.
  5. Remove shrimp and transfer to a serving dish. Drizzle with chimichurri sauce and serve remaining sauce on the side.
