  3. Heat a non-stick skillet over medium heat and add vegetable oil. Add the marinated cod and cook for about 3 minutes.
  4. Cover the skillet to preserve moisture and cook for an additional 3 minutes.
  5. Uncover and flip the cod fillets. Increase heat and cook for an additional minute, basting with leftover marinade.
  6. Transfer the cod to a plate and garnish with sliced spring onions. Serve immediately.
