Ingredients
  

For the Sausage
  • 1 pound Smoked or Andouille Sausage Use kielbasa or turkey sausage for a milder flavor.
For the Veggies
  • 1 cup Red Bell Pepper
  • 1 cup Yellow Bell Pepper
  • 1 cup Green Bell Pepper
  • 1 medium Onion Best to use yellow or white onions.
  • 3 cloves Garlic Fresh minced garlic is preferable.
For the Seasoning
  • 1-2 tablespoons Cajun Seasoning Adjust according to spice preference.
For the Base
  • 2 cups Cooked Rice Use leftover or brown rice.
For Cooking
  • 2 tablespoons Olive Oil or Butter Use olive oil for a lighter option.
For Garnish
  • 1/4 cup Fresh Parsley Substitute cilantro for a different twist.
  • 1 piece Lime Fresh lime is best.

Method
 

Cooking Instructions
  1. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil or butter. Allow to heat for 1-2 minutes.
  2. Arrange the sausage slices in a single layer and sear for 3-4 minutes on each side until browned.
  3. Remove the sausage, then add chopped onion and bell peppers to the skillet. Sauté for 5-6 minutes until tender.
  4. Add minced garlic and sauté for an additional 30 seconds until fragrant.
  5. Sprinkle Cajun seasoning into the skillet, stir for about 1 minute to toast.
  6. Return the browned sausage back to the skillet to meld with the veggies for 1 minute.
  7. Stir in 2 cups of cooked rice and let simmer for 2-3 minutes to soak up the flavors.
  8. Garnish with freshly chopped parsley and serve with lime wedges on the side.
