  • 1 cup green olives preferably Castelvetrano or Manzanilla
  • 1 cup feta cheese block feta in brine
  • 8 oz cream cheese at room temperature
  • 2 tbsp extra virgin olive oil high-quality
  • 1 clove garlic minced
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 cup roasted red pepper chopped finely
  • 1 tsp dried oregano
  • 1/2 tsp chili flakes optional
  • 1/2 tsp freshly ground black pepper to taste
  • 2 whole green olives for garnish
  • 1 tbsp extra virgin olive oil for garnish

Preparation Steps
  1. In a food processor, combine the green olives, feta cheese, cream cheese, extra virgin olive oil, minced garlic, lemon zest, and lemon juice. Pulse for about 30 seconds until smooth but still a bit textured.
  2. Add chopped roasted red pepper, dried oregano, chili flakes, and black pepper. Pulse 2-3 times to integrate while retaining some chunks.
  3. Scoop the dip into a serving bowl or jar. Drizzle with extra virgin olive oil and garnish with whole green olives.
  4. Refrigerate for at least 30 minutes to allow flavors to meld before serving.
