Ingredients
  

For the Steak and Marinade
  • 1 lb Sirloin Steak substitution: flank, skirt, or ribeye can be used
  • 2 tbsp Olive Oil use for marinating and cooking
  • 2 cloves Garlic minced, fresh garlic is recommended
  • 1 tbsp Lemon Juice fresh, substitution: lime juice can be used
  • 1 tsp Dried Oregano substitution: fresh oregano or thyme can be alternatives
  • 1 tsp Dried Thyme can be omitted or replaced with other herbs
  • ½ tsp Salt adjust to taste
  • ¼ tsp Black Pepper adjust to taste
For the Bowl Base
  • 2 cups Cooked Grains base for the bowl; options include brown rice or quinoa
  • 1 cup Cherry Tomatoes halved, adds freshness and color
  • 1 medium Cucumber diced, contribute crunch
  • ½ medium Red Onion thinly sliced, can be omitted for milder taste
  • ½ cup Kalamata Olives pitted, omit for a lower-sodium option
  • cup Feta Cheese crumbled, substitution: omit for a dairy-free option
  • ¼ cup Fresh Herbs chopped, parsley or dill recommended
For the Tzatziki Sauce
  • 1 cup Greek Yogurt plain, adds creaminess
  • 1 clove Garlic minced for tzatziki
  • ½ medium Grated Cucumber squeezed dry for tzatziki
  • 1 tsp Honey omit for Whole30
  • 1 tbsp Fresh Dill for tzatziki; can be substituted with mint

Method
 

Marinate and Cook
  1. In a small bowl, mix together olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and pepper. Coat the sirloin steak with this marinade, ensuring it’s evenly covered. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes but up to 4 hours for deeper flavor infusion.
  2. In a medium bowl, combine Greek yogurt, minced garlic, grated cucumber, honey, and fresh dill. Stir everything together until it's smooth and well-blended. For the best flavor, cover the tzatziki and chill in the refrigerator for at least 20 minutes.
  3. Heat a large skillet over medium-high heat. Once hot, add the marinated steak and sear it for about 4-5 minutes on each side until it reaches your desired doneness, ideally medium-rare to medium. Transfer to a cutting board and let it rest for at least 5 minutes before slicing thinly against the grain.
Assemble the Bowl
  1. Prepare serving bowls with a base of cooked grains like brown rice or quinoa. Top with sliced steak, halved cherry tomatoes, diced cucumber, thinly sliced red onion, Kalamata olives, crumbled feta cheese, and fresh herbs. Drizzle with tzatziki sauce for a complete experience.
