  • 1 can Cooked Chickpeas drained and rinsed
  • 2 tablespoons Olive Oil or avocado oil
  • 1 teaspoon Cumin adjust to taste
  • 1 teaspoon Paprika consider using smoked paprika
  • 1 teaspoon Garlic Powder or fresh garlic
  • to taste Salt
  • 4 small Pita Breads whole wheat recommended
For the Toppings
  • 2 cups Shredded Lettuce or spinach/arugula
  • 1 cup Diced Tomatoes or salsa
  • 1 cup Diced Cucumbers or bell peppers
  • 1/2 cup Diced Red Onions or green onions
  • 1/2 cup Crumbled Feta Cheese or plant-based feta
  • 1/4 cup Tahini Sauce or ready-made tahini

Method
 

Instructions
  1. Heat olive oil in a non-stick pan over medium heat, add chickpeas, cumin, paprika, garlic powder, and salt. Cook for 5-7 minutes until golden brown.
  2. Warm pita breads in a toaster or oven for 1-2 minutes until soft.
  3. Distribute sautéed chickpeas among the warmed pita.
  4. Top each taco with shredded lettuce, diced tomatoes, cucumbers, and red onions.
  5. Drizzle tahini sauce over the toppings.
  6. Fold pita into tacos and serve immediately while fresh and warm.
