- In a medium saucepan, bring 4 cups of water to a boil over medium-high heat. Add the sago pearls and cook for about 15 minutes until they turn translucent and chewy.
- After cooking, remove from heat, cover the saucepan, and let the pearls sit for another 15 minutes.
- Strain the sago pearls through a sieve and rinse under cold water to stop the cooking process.
- In a blender, combine the diced mango with the chilled evaporated milk. Blend until smooth to create a mango puree.
- In a mixing bowl, combine the cooled sago, chopped mango pieces, and any chosen optional toppings. Mix in the blended mango mixture, coconut milk, and condensed milk to taste.
- Transfer the mixture into serving cups or a large bowl, cover with plastic wrap, and chill in the refrigerator for at least 1 hour before serving.
