  • 2-3 large Mango About 2 lbs, peeled and diced; use any ripe mango variety.
  • 0.5 cup Evaporated Milk Chilled; provides creaminess to the pudding.
  • 3 tablespoons Condensed Milk Adjust to taste for sweetness.
  • 1 cup Coconut Milk Full-fat; can be replaced with other plant-based milk if desired.
Optional Toppings
  • 1 cup Coconut Jelly Adds a fun texture.
  • 1 cup Mango Jelly Enhances the mango flavor.

Method
 

Cooking Instructions
  1. In a medium saucepan, bring 4 cups of water to a boil over medium-high heat. Add the sago pearls and cook for about 15 minutes until they turn translucent and chewy.
  2. After cooking, remove from heat, cover the saucepan, and let the pearls sit for another 15 minutes.
  3. Strain the sago pearls through a sieve and rinse under cold water to stop the cooking process.
  4. In a blender, combine the diced mango with the chilled evaporated milk. Blend until smooth to create a mango puree.
  5. In a mixing bowl, combine the cooled sago, chopped mango pieces, and any chosen optional toppings. Mix in the blended mango mixture, coconut milk, and condensed milk to taste.
  6. Transfer the mixture into serving cups or a large bowl, cover with plastic wrap, and chill in the refrigerator for at least 1 hour before serving.
