Ingredients
  

For the Pasta
  • 8 oz spaghetti or linguine opt for gluten-free pasta if needed
For the Sardine Mixture
  • 1 can sardines in olive oil can substitute with canned salmon
  • 2 tbsp olive oil extra virgin is best
  • 2-3 cloves garlic minced, or use garlic powder for milder flavor
  • 1/4 tsp red pepper flakes optional
For the Flavor Enhancers
  • 1 whole lemon zest and juice
  • salt to taste
  • freshly ground black pepper to taste
For the Finishing Touches
  • 1/4 cup fresh parsley for garnish, can substitute with basil
  • 1/4 cup grated Parmesan optional for flavor

Method
 

Cooking Instructions
  1. In a large pot, bring salted water to a boil. Add spaghetti or linguine and cook until al dente, about 8-10 minutes. Reserve 1/2 cup pasta water before draining.
  2. While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 2-3 minced garlic cloves and sauté for 1-2 minutes until fragrant.
  3. Gently stir in a can of sardines along with their oil; break apart with a spoon and cook for 2-3 minutes.
  4. Add the zest and juice of one fresh lemon along with a pinch of red pepper flakes. Stir and let bubble for another minute.
  5. Carefully add the drained pasta into the skillet, tossing to coat. Use reserved pasta water to adjust sauce consistency.
  6. Season with salt and freshly ground black pepper. Plate and garnish with fresh parsley and optional grated Parmesan cheese.
