Baking Instructions
- Preheat your oven to 350°F (180°C) and prepare baking sheets lined with parchment paper.
- In a medium bowl, whisk together flour, cornstarch, and baking powder.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Add lemon zest and dried lavender, mixing well.
- Beat in the egg until fully combined.
- Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
- Scoop dough onto prepared sheets, spacing them 2 inches apart. Flatten each ball slightly.
- Bake for 12-15 minutes until edges are golden. Let cool on sheets for 5 minutes before transferring to wire racks.
- For the glaze, whisk together powdered sugar, lemon juice, and lavender extract. Add food coloring if desired.
- Once cookies are cool, spoon glaze over them and allow to set for 30 minutes.
