Step-by-Step Instructions
  1. Season the chicken breasts with salt, pepper, and lemon zest. Let it rest while preparing the skillet.
  2. Heat olive oil in a large skillet over medium heat for 1-2 minutes until it shimmers.
  3. Cook the seasoned chicken in the skillet for about 5-7 minutes on each side until golden brown and cooked through.
  4. Sauté minced garlic in the same skillet for about 1 minute until fragrant.
  5. Add uncooked orzo to the skillet and toast for 1-2 minutes.
  6. Pour in chicken broth and lemon juice, bring to a boil, then reduce to a simmer and cover for 10-12 minutes.
  7. Stir in spinach or kale and wilt for about 2-3 minutes.
  8. Dice and return the chicken to the skillet along with feta cheese, and warm through.
  9. Adjust seasoning with salt, pepper, or lemon juice as desired.
  10. Serve garnished with chopped parsley.
